Love is a blueberry pancake

Good evening. How was your Tuesday?


Today, I opted to work from home, and had a couple of very positive conference calls. Music industry folks can get as stressed out as any others, so I always get a little anxious about phone conferences, but today's folks were awesome. Down to earth, funny and most importantly, gave me some great suggestions for the shows we have with their artists. It was Lovefest 2011, and made for an inspired and productive workday.


Zak came home with good news this afternoon, and I said we needed to celebrate. What says "congrats" better than blueberry pancakes?
Blueberries were necessary, because love is a blueberry pancake.

I used a base of Great Harvest pancake mix (purchased from KERF's OpenSky deal!), and added vanilla protein powder. 

I made a double batch to make thousands and thousands of pancakes (okay, or enough for six servings). 

What's that, you say? You'd like the recipe? Sure, why not!


Blueberry pancakes, a la Backstage Balance
Adapted from Great Harvest pancake mix recipe
Yield: 8 generous servings
2.5 cups of water
2 T coconut oil 
1 whole egg, 2 egg whites
3 cups Great Harvest pancake mix
2 scoops vanilla protein powder (I used the scoop that came in the protein powder container)


1. Heat griddle and grease with butter.
2. Whisk together wet ingredients. 
3. Add the pancake mix 1/2 cup at a time, then mix in the protein powder.
4. Scoop pancake batter, a scant 1/4 cup at a time to form pancakes. 

5. Add several blueberries to uncooked side of pancake
6. Flip and cook to perfection
7. Enjoy!
Delicious.


You do the talking: Conference calls, friend or foe? I don't know why, but I usually hate them. After today's calls, I feel positive about future ones! 


When it comes to pancakes, what is your ideal flavor combination? Aside from blueberry, I love chocolate chip pancakes. Or restaurant pancakes covered with a hot apple cinnamon sauce, mmm.

Smoooooooooothie

How are you doing tonight? I am relaxing with some Sour Patch Kids and the latest episode of Jersey Shore. Because it's a Thursday.

Today at work, I spent some quality time with my spreadsheets, and got a ton accomplished. I sometimes think of each show we do at work as a little baby that I take care of (yes, I know that's kinda weird), and today my babies got lots of attention. Three cheers for productivity!


I'd like to share with you, my very favorite smoothie combination. There is probably nothing unique about it as many other bloggers have used similar ingredients. So I'm not claiming to have invented this beast... rather, this is my favorite mishmash of healthy smoothie ingredients!


It starts with frozen, pitted cherries, spinach and some milk.
Then, the star of the show... Cacao!
(Any Portlandia fans in here? Remember the Cacao skit? Too funny.)

Some chia seeds. If you haven't heard of these, they are the same seeds that you put on chia pets. They are full of good-for-you stuff (Omega 3's, B-vitamins, etc.) and because they become gelatinous when they combine with liquid, they aid with hydrating your bod.
Protein powdah (chocolate, of course)...
It looks like a pile of... healthy:
But once blended, has the creamy consistency and rich flavor of a chocolate milkshake. Delicious!
Healthy Smoothie, Backstage Balance-style
Serving size: Two giant glasses


1 cup milk (any kind will do - I like to use coconut milk beverage)
3 handfulls of spinach (about 2 cups, packed)
1 cup pitted, frozen sweet cherries
2 tbsp raw cacao powder (cocoa powder will work, too)
1 tbsp chia seeds
1.5 scoops chocolate protein powder


Blend milk, spinach, and frozen cherries until smooth. Stop blender and add in the raw cacao powder, chia seeds and protein powder. Blend until incorporated, then serve and enjoy!

I almost always roll with a chocolatey or vanilla-y smoothie. I've tried to do fruity smoothies and haven't quite hit my stride with those. 


Do you see the resemblance between The Situation and Pauly Shore? I realize it may not be super obvious but was seriously giggling over putting their images side by side :-)

Pumpkin Spice Granola featuring Nature's Pride Bread

A recipe post! Hold onto your hats!


As part of the Foodbuzz Tastemaker Program, and in promotion of the upcoming blogger festival, I received an email about a recipe contest with Nature's Pride Bread. 
I wanted to think 'outside the box' and find a way to uniquely feature this wholesome bread. Brainstorming beyond sandwiches, French toast and bread pudding recipes, one idea began to develop... a granola made from bread.


You see, I love finding new ways to use leftover foods. My world was rocked with blogosphere favorites such as frozen banana soft-serve (using bananas that would otherwise get tossed) and oats in a jar (using the last of a jar of peanut butter as a vehicle for hot oatmeal). Finally, a recipe to help use those leftover slices / end pieces of bread! 



Of course, this recipe was made using fresh Nature's Pride Nutty Oat bread :-)

Influenced by Autumn flavors, I researched different recipes for pumpkin granola and came up with this one. Using coarse bread crumbs made from Nature's Pride Nutty Oat bread, adding hearty rolled oats and focusing on pumpkin, honey and maple syrup for great Fall flavors, then slow roasted in a warm oven, this recipe turned out deliciously good. The finished product has the perfect amount of light crunch, pumpkin spice flavor and just a hint of sweetness.

Pumpkin Spice Granola featuring Nature's Pride Bread

Ingredients
  • 2 cups Nature's Pride Honey Oat bread (about 4 slices), coarsely processed and packed firmly in measuring cups
  • 1/3 cup rolled oats
  • 2/3 cup canned pumpkin (100% pure)
  • 1-1/2 tablespoons Wisconsin honey
  • 1-1/2 tablespoons pure maple syrup - Wisconsin Grade A, Dark Amber
  • 2 tablespoons and 1/2 teaspoon brown sugar
  • 1-1/4 teaspoons pumpkin pie spice
  • 1/4 cup canola oil
  • 2 tablespoons dried currants
  • 2 tablespoons dried cranberries
  • 1/3 cup chopped walnuts
  • 2 tablespoons flax seeds (whole)

  • Materials
Baking pan with raised sides (like a jelly roll pan)
Food processor
Measuring cups 
Measuring spoons
Spatula 


Directions
1. Preheat oven to 250 degrees. Coat baking pan with non-stick cooking spray.
2. Process the Nature's Pride bread slices in a food processor, pulsing the processor until bread is in small, coarse crumbs.
3. In a large bowl, combine the Nature's Pride bread crumbs with rolled oats. Pour onto baking sheet and put into preheated oven for 7 minutes.
4. In food processor, combine the canned pumpkin, honey, maple syrup, brown sugar and pumpkin pie spice. Process until smooth, adding up to 1/3 cup canola oil (depending on desired amount).
5. Remove the Nature's pride bread crumbs and rolled oats mixture from oven and put back into the large mixing bowl. Add the pumpkin mixture, and stir to combine.
6. Add the dried currants, dried cranberries, chopped walnuts and flax seeds; stir to combine.
7. Re-spray the baking pan. Pour the mixture onto the pan, spreading out into a thin layer so the entire surface of the pan is evenly covered.
8. Bake in preheated oven, stirring every 10 minutes, until lightly browned and crispy, about 1 hour or a little longer,  until desired level of toastiness / crunch is reached.
9. Remove from oven; cool to room temperature. Enjoy :-)
10. Store in an airtight container. 
11. Cross your fingers that this recipe will be selected as a winner for the 2010  Foodbuzz blogger festival and make me a Nature's Pride Bread Ambassador :-D


Disclaimer - I was told via Foodbuzz that I would receive a coupon for a free loaf of Nature's Pride Bread, however haven't yet received it. The product was purchased with my own money, and the opinions expressed about the recipe are my own. 


I am very pleased with the end results! And apparently so is Zak, who made more than half of the batch of granola disappear by the time I got up the next morning. I guess I will have to whip up some more this weekend?

Since discovering the frozen banana soft-serve recipe, I have not wasted a single 'nana. It's that good!
